Ground beef absorbs seasoning, pairs with every cuisine tradition, and comes together in twenty minutes when the pan is properly hot and the technique is right. The failure mode is always the same: gray, steamed beef with no browning, no crust, no depth. The fix is always the same: high heat, space in the pan, don’t touch it until it’s ready.

The 80/20 fat ratio is the working standard for everything in this collection. Leaner beef doesn’t have enough fat to brown properly or to lubricate a meatball or burger. 80/20 has enough fat to produce real Maillard reaction browning, to keep a meatloaf moist, and to keep a burger from drying out. Use leaner beef and the techniques in these recipes don’t work the same way.
